Matchia Parfait
Since I’ve been making lots of granola, I've been making lots of granola-topped and granola-layered creations, like this Matchia Parfait. You may be wondering what Matchia is. I would be, too. My definition of Matchia is the mix of matcha and chia. I love matcha lattés and chia seeds have SO many health benefits packed in a tiny little seed. If you like matcha, then you'll love this sweet, simple, and energizing parfait!
For the Chia Pudding Layer:
1/4 cup coconut yogurt
1/4 cup vanilla almond milk
2 tablespoons chia seeds
1 tablespoon agave or pure maple syrup
1 teaspoon vanilla powder
For the Matcha Smoothie Layer:
1 large banana, chopped and frozen
1 teaspoon matcha powder
3-4 frozen coconut cubes
1/4 cup vanilla almond milk, or as needed
Agave or sweetener of choice, to taste
For the Remaining Parfait:
1/4 cup ‘Nola mix
1/4 cup coco whip
Sprinkle of vanilla chia coconut flakes
Method:
Place all the Chia Pudding ingredients in a jar.
Shake or stir to combine, then let it sit for at least a couple hours.
For the Matcha Smoothie layer, blend until smooth, adding almond milk as needed to blend.
In a Mason jar, layer the granola, matcha smoothie, and chia pudding.
Add coco whip on top with more granola and a sprinkle of the vanilla chia coconut flakes.
