Pink & Purple Popsicles
Ingredients:
3 cups vanilla Greek yogurt
1 cup plant-based creamer or coconut milk
1 packet Pitaya Plus, thawed
1-2 capsules Blue Majik powder
1/2 cup Naked ‘Nola
Small drizzle of honey
Steps:
In a bowl, combine the yogurt with the creamer or coconut milk.
Divide it into 3 separate bowls.
In one of the bowls, stir in half of the packed of the thawed pitaya.
In another bowl, stir in the other half of the pitaya packet as well as the blue majik to make the yogurt purple.
Leave the third bowl of yogurt and creamer as it is.
Pour into popsicle molds, while alternating between the purple, pink, and white.
Freeze for about 30 minutes, then stick popsicle sticks in them.
To add the granola, pack it in around the popsicle stick at the base of the popsicle. Drizzle honey on top of the granola to help it stay together.
Freeze until solid, then enjoy!
